The project involved the design and implementation of a new fast-food restaurant in the center of Ptolemaida.
Three hospitality professionals joined forces to revive the city’s oldest “souvlaki place,” aiming to present a fresh image that appeals both to the younger crowd of nearby cafés and to families and older age groups. The core philosophy was to showcase quality, handmade street food—fast but not mass-produced.
The existing space posed challenges: a narrow, elongated layout over 20 meters deep, only 5 meters wide at the front, and a dramatic ceiling height of 5.5 meters. This "tall, narrow box" became the canvas for a new identity. The main design concept was to create a permanent indoor “kiosk,” like those found in global street food markets, using ephemeral materials such as corrugated metal, perforated mesh, and timber planks.



Positioned at the back of the store to make room for indoor seating near the window, the kiosk becomes a visual destination. Oversized graphics on walls and floors signal the menu: GYROS, SOUVLAKI, HANDMADE. A vaulted metal structure stretches from the back to the storefront, inviting passersby inside. At the center, a large illuminated word-puzzle playfully spells out words like "taste," "quality," and "fresh."
The material palette reinforces the handmade and street-food concept: handmade Spanish tiles in ochre, terracotta, and green, copper hues, mosaic flooring, and raw wood and metal finishes. Completed in December 2022, the design delivers a unique identity that balances tradition and modern urban culture, successfully serving both dine-in and take-away customers.
